Raspberry Cheese Danish


Raspberry Cheese Danish

8 oz. tube of Crescent Rolls
4 oz. Cream Cheese
3/4 C. Confectioners Sugar
1T. Raspberry Jam (or your personal preference)
2t. Milk

Heat oven to 375 degrees.

Unroll crescent rolls and separate into 4 rectangles. Seal perforations, then cut each rectangle in half (makes 8 squares).

Beat cream cheese with 1/4 C. of confectioner's sugar; spread 1 T. of diagonally across each square. Top with 1 T. raspberry jam (or jam of your preference). Pinch 2 opposite corners of dough over filling to seal.

Bake on parchment lined baking sheet at 375 degrees for 10-12 minutes or until golden brown.

Combine 1/2 C. confectioners sugar with 2 t. milk. Drizzle over danishes. 

Serves 8. 

Perfect for that morning cup of Joe!

Vegetarian Pizza

Here is a simple and healthy vegetarian pizza I prepared for dinner tonight. Enjoy!


I bought a ready-made thin crust pizza crust. Brush with olive oil. Then spoon pizza sauce over the entire crust. Sprinkle with baby spinach.

Add mushrooms, black olives, red onion, green pepper and 1 clove of garlic.
Add corn and black beans (rinsed).
Add feta cheese and part-skim mozzarella cheese. 


Bake at 425 degrees for 15-20 minutes or until cheese is just brown on top.

Vegetarian Pizza

1 ready-made pizza crust
olive oil
1 jar of pizza sauce
1/2 t. Kosher salt
1/2 C. of spinach
1/2 C. mushrooms, sliced
1/4 C. black olives, sliced
1/4 C. red onion, diced
1/4 C. green pepper, diced
1 clove of garlic, diced
1/2 C. corn
1/2 C. black beans, rinsed
3/4 C. feta cheese, crumbled
2 C. part-skim mozzarella cheese, shredded

Heat oven to 450 degrees. 

Brush pizza crust with olive oil. Spread pizza sauce over crust. Sprinkle salt over top of crust. Top with spinach, mushrooms, black olives, red onion, green pepper, garlic, corn, black beans, feta cheese and mozzarella cheese.

Turn oven down to 425 degrees. Back pizza for 10-20 minutes until cheese starts to brown. Enjoy!

You can add other vegetables and cheeses. I served it with organic carrots and roasted red pepper hummus.

ID Your Pet







We've had a few close calls with losing our beagles over their young lives. Our oldest beagle, Tyson, gets loose and runs like mad for miles and miles. Each time thankfully he's had his pet ID tag on. Our other beagle, Macy, is too scared to venture out very far but we have her pet ID tag on her at all times too. I've made each of our pets an ID tag. It's important that your pets have tags, otherwise they could end up being stolen or at your animal shelter.

Gourd Bird Feeder





This time of year we always take special care of the birds who stay here for the winter. I have always been one to purchase fun and unique bird feeders. 

My husband, Mike, is a gourd artist and is always cutting gourds in half using tops of gourds for hats or other unique things. On a particular day this past fall he was working on a witch for a customer and he cut the top off of a small martin gourd (for the witch hat). I asked him what he was going to do with the bottom of the gourd and he said, "I'll make a bowl out of it." In comes my bright idea - a birdfeeder!

And so that is how Mike started making and selling these little bird feeders. The birds love it because they can sit in the middle of the bowl and as the bird seed goes farther down into the bowl I think it gives them a sense of security that, Shilo, the neighbor's cat can't get them. If you would like one just leave a comment. They start at around $15, depending on the size of the bird feeder. He also can put a design on them as well.  Mike does all kinds of things with his leftover gourds and this is just one example of how he tries to use every gourd.

Vegetarian Super Bowl


This was my first Super Bowl as a vegetarian and when I helped my husband, Mike with the menu this year I knew I had to come up with something different other than our usual brats, sausages in BBQ sauce and chicken wings. We had all those things, I just didn't indulge in them. 

I searched the internet for a avocado grilled cheese sandwich and found a very good recipe at:

It was delicious and I highly recommend it. 

We also served vegetables with a low fat ranch dressing, pepper jack and sharp cheddar cheeses with crackers and a cheese dip that is a family favorite. The cheese dip is very easy to make. You take a large box of Velveeta and a jar of salsa and put that in the crockpot until it melts. We used our salsa out of the garden and it was very tasty.

Homecoming

Last night our youngest had the great honor of being part of Tell City High School's homecoming court. One king and one queen was elected by the student body. Though he didn't win we are still very proud of him. He plays basketball so that is why he has his warm-ups on. This is a shot that was snapped of us before the festivities began.

A Snowy Saturday and a Warm Quilt

We had a dusting of snow here in Southern Indiana overnight. The temperate is 27 degrees as I type this. One could say our family is a blanket family when it comes to spending quality time together (especially on cold days like this) either reading, creating or watching our favorite basketball team play ball (Go Hoosiers and Miami). There is no better blanket than a handmade quilt.

Before my grandmother passed away she made each member of her family a full size quilt. No machine was used just her hands, which makes each of the quilts in our family even more special. We use her quilts each and every day and today is that kind of day when a quilt is required - it's cold and the Hoosiers are playing ball today.

There is a special quilter on Etsy, Never Not Quilting, that I have grown very fond of not only because she is a kind soul who shares her beautiful fabric scraps with me, but because her quilts remind me of my grandmother's quilts. She has such an eye for putting together the right fabrics. Her color choices are just beautiful. She offers lap quilts, full size quilts, baby quilts and also quilt patterns. Quick Breakfast

Yesterday I saw a pin on Pinterest offering a quick fix for breakfast. I tried locating the Pin but for some reason I can't find it. So when I fixed it for myself this morning I took a picture before indulging in this wonderful, healthy breakfast.
